The pesto alla genovese is a typical recipe from Ligurie, particularly from Gènes. It is made out of fresh basil, extra virgin olive oil, pine nut, Parmigiano Reggiano PDO and garlic. The pesto alla genovese from Al Dente La Salsa respects the traditional recipe.

Ingredients (4 servings)

  • Coarse sea salt
  • 1 to 2 jars of pesto alla Genovese (135g) from Al Dente la Salsa
  • 1 pack of 500g of Penne Rigate or Spaghetti from Al Dente la Salsa
  • Parmigiano Reggiano PDO
  • Basil leaf for dressing

To cook your pasta like a true Italian chef, here is the recipe:

  • In a big pot, boil 5L of water with 50g of salt.
  • Add the 500g of pasta and stir once in a while. Let the pasta cook for 12 minutes at medium heat until the pasta is al dente. Set aside 1 ladle of cooking water then drain the pasta.
  • Put the pesto and the pasta water you set aside in a pan with the heat off. Why add pasta water? The cooking water contains starch from the pasta which adds to the creaminess of the sauce. This will favor the harmony between the pasta and the salsa.
  • Add the pasta to the pan and mix everything so that the pasta is coated with pesto. This step is crucial to create an osmosis between the pasta and the sauce. (Tip from Italian chefs: Don't put the jar of sauce directly on the pasta).
  • Serve the pasta hot with some Parmigiano Reggiano and a basil leaf to decorate the dish.
