P. A generous, flavorful, simple, and sexy cuisine!
AROZ. Where does your inspiration come from?
P. I always say, "I cook what I feel like eating!" I cook instinctively, test different combinations, or prepare family recipes. It's truly an intuitive, spontaneous cuisine that always prioritizes local and seasonal products!
AROZ. If you had to cook a dish to impress Louka, what would it be?
P. Honestly, she's not hard to please (laughs), but a good pasta with lobster or langoustines, I know she loves that!
AROZ. What is Paul's dish that you could eat every day without getting tired?
L. I'm fortunate to eat his cuisine every day, and I'm still amazed each time by his creativity and talent! But if I had to choose just one of his dishes, it would be his "potato rocks"; potatoes coated in a crust of salt and seaweed with salmon roe! The dish is in his book and is incredible both visually and in terms of taste!
